Few recipes are as universally loved as nachos, one of the few dishes that are home anywhere on the globe. They are more than a stoner food; they're culinary olive branches between worlds. Everyone has their take on the cheesy classic, and Kronic Kitchen is here with our twice infused THC nacho recipe. This potent edible is a vegetarian recipe, although feel free to include a pound of any cooked meat to boost your protein and flavor profiles. For this dish, we are creating a simplified cheese sauce (or mornay for the fancy types out there) from our Mac and Cheese recipe along with rosin infused sweet and sour guacamole. Infusing vinegar with rosin can be a tricky process. Cannabinoids are hydrophobic molecules that can't form the necessary chemical bonds in water. Vinegar usually has within 5 - 6% ethanol alcohol by volume (ABV). With little alcohol within the vinegar, we need to add a boost to achieve the complete nonpolar bond with THC. That bonding boost comes from vodka, with an average 40% ABV it can help the vinegar be everything we need it to be. To infuse mix 2 tbsp vinegar and 2 tbsp vodka in a microwave-safe container and heat on low power for 30 seconds. Add your decarbed rosin and let it sit for a few minutes, the rosin will bead and stay clinging to your rosin tool after you place it inside. Once the rosin has begun to separate and dissolve stir carefully until rosin is completely incorporated. Heat the vinegar and vodka from time to time but using the same time and power settings. Taking the time to make it right pays off in the end with highly potent vinegar to add to our recipe.
